Perfect for a cold, rainy winter's night!

Let me preface this post with the fact that I spent all day at a text-book adoption meeting (boring!) in an freezing room.  I couldn't feel my toes and goosebumps were permanently tattooed all over my body all morning.  When we took a break for lunch, one of the teacher who lives nearby to the school we were meeting at went home and brought back a space heater and snuggies for all!  Needless to say, the afternoon was a little more pleasant in my stylish snuggie!  Even though I was pretty much thawed out by the time I got home, I was still in the mood for some good ole warm comfort food!

I found this recipe on My Recipe's website through Cooking Light, altered it slightly, and thought it was delicious.  It definitely hit the spot on this dreary night!  The hubbie is a big fan of his mom's homemade Cincinnati Chili and was a bit skeptical about using ground turkey but this recipe pleased him! :)

Cincinnati Turkey Chili:

Ingredients:
  • Cooking spray
  • 1-1.5 lbs  lean ground turkey
  • 1  cup prechopped onion, divided
  • 1  cup chopped green bell pepper
  • 1  tablespoon minced garlic
  • 1  tablespoon chili powder
  • 2  tablespoons tomato paste
  • 1  teaspoon ground cumin
  • 1  teaspoon dried oregano
  • 1/4  teaspoon  ground cinnamon
  • 1/8  teaspoon  ground allspice
  • 3/4  cup  fat-free, less-sodium chicken broth
  • 1  (15-ounce) can kidney beans, rinsed and drained
  • 1  (14.5-ounce) can diced tomatoes, undrained (I used tomatoes with oregano and garlic by accident)
  • 3 bay leaves
  • cheddar cheese, shredded
Preparation:
Heat a large pot (or dutch oven if you have one) over medium-high heat.  Coat pan with cooking spray. Add turkey; cook 3 minutes, stirring to crumble. Add 1 cup onion, bell pepper, and garlic; sauté 3 minutes. Stir in chili powder and next 5 ingredients (through allspice); cook 1 minute. Add broth, beans, and tomatoes; bring to a boil. Put 3 bay leaves in the pot.  Cover, reduce heat, and simmer 20 minutes, stirring occasionally. Remove from heat. Sprinkle cheese over the chili.  I also added a dollop of sour cream to mine!
Andy and I will be watching the Purdue vs. Ohio State basketball game tonight.  Go Boilermakers!  Yes as a graduate of IU, I am rooting for Purdue.  Hey now, IU is pretty terrible this year at bball and hubbie went to Purdue for undergrad so it's legal!

  1. A healthy chili recipe is always great! I have been making that pumpkin chili from my party, but I am ready to try something different. I have been munching on some chili dip we made over the weekend for football - sinful and dangerous :-)
